    Zawsze, gdy tylko mam okazję wchodzę z mężem do różnych restauracji. Osobiście uwielbiam restauracje w dobrych hotelach, ponieważ tam kucharze przygotowani są na gości będących na diecie wegetariańskiej, wegańskiej, bezglutenowej, oraz diabetyków i wszystkich innych, którzy wolą lub muszą jeść rozsądniej. A o to wyjątkowo trudno w innych restauracjach niezależnie od miasta, czy to Warszawa, Poznań, Kraków, Gdańsk, Gdynia, Sopot czy Wrocław. Zazwyczaj, gdy połączy się wymagania wegetariańskie lub doda się do nich jeszcze bezglutenowe to kelner po wizycie w kuchni proponuje sałatkę grecką czy inne warzywo liściaste. Jakby wychodząc z założenia, że przecież ten dziwny gatunek ludzi wcina tylko sałatę na zimno, nawet, gdy na dworze panuje mróz -25 stopni. To nic, przyzwyczaiłam się i wiem, że tak jest. Byłam w setkach restauracji i o ile stek ciężko schrzanić (jeśli ma się dobre mięso) czy makaron z sosem, o tyle dania warzywne do tego wegańskie lub bezglutenowe są gigantycznym wyzwaniem dla kuchni. A dla mnie właśnie wtedy widać kunszt kucharza, co umie zrobić z warzywami, żeby uwydatnić ich smak a nie zrównać do poziomu frytki z torebki.
    Odwiedziłam drugi raz restaurację Mercato mieszczącą się w hotelu Hilton w Gdańsku. Pierwsze nasze spotkanie było w zeszłym roku, gdy zrezygnowałam z jedzenia czegokolwiek i napicia się nawet wody, po tym jak obsługa znudzona i zniesmaczona obsługiwała klientów. Brakowało tylko żeby serwowali również kopa w tyłek na rozpęd celem pozbycia się klientów na dobre. Dałam Mercato drugą szansę, w tym roku podjęłam wysiłek i weszłam do środka. Obsługa miła, serdeczna … ooooo pomyślałam, wymienili załogę i zaczęło grać. Poprosiłam z rodziną o kartę dań i już na wstępie zapytałam, czy są dania wegetariańskie. Pan cały zadowolony z łatwości pytania odpowiedział, że oczywiście i oznaczone są w karcie symbolem „V” – danie wegetariańskie. Czytam, czytam i oczom nie wierzę, pieczony śledź wege, wege ryba z frytkami, wege krewetki w tempurze, oraz halibut na purre ziemniaczanym oczywiście również wege. Przez chwilę poczułam się jak w programie „Mamy cię” czy innym, którego celem jest zmieszanie i zaskoczenie niczego niespodziewającego się człowieka.
    Kelner wrócił, ja kartę już znałam i mówię, że przecież nie ma w niej dań głównych wege. Pan pokazując mi palcem przekonuje, że ten halibut jest wege. A czy halibut ma system nerwowy zapytałam … tu chwila ciszy i odpowiedź „ma” . Uff … tyle wie, dobrze, pomyślałam. I kontynuuję swoją wypowiedź, że ryba wege nie jest, że wegetarianie nie jedzą mięsa, a ryba to mięso – nie lata, nie gada, nie gdacze ani nie kwiczy, ale jednak to zwierzę, a co za tym idzie mięso! Pan z lekkim przekąsem powiedział, że pierwszy raz słyszy, że wegetarianie nie jedzą ryb. O boniu, no ręce mi opadły … to, że w jakiejś przydrożnej budzie, garkuchni, pani kucharka tego nie wie, to luz, nie musi, ale do cholery, jeśli restauracja mieści się w hotelu, który ma pięć gwiazdek, wypadałoby, no wypadałoby! Jak dla mnie porażka, na całej linii. Jedyny plus tej wizyty w Mercato  to wypijecie organicznej i smacznej herbaty. Wegetariańskiego, oprócz deserów i zupy nic nie zjecie, mimo zapewnień kelnera i opisu w karcie. Zastanawia mnie tylko dlaczego łosoś bałtycki nie jest w tej karcie wege skoro krewetki i halibut są, normalnie niedopatrzenie jakieś ;)

    Jadłonomia pokazywała na facebooku kanapkę wege, jaką dostać można w samolocie.  I nie dziwmy się, w że wegetariańskie śniadanie serwowane przez LOT Polish Airlines to niezwykle wyrafinowana kanapka z kapustą kiszoną, To i tak nie jest źle, bo w międzynarodowej sieci hoteli Hilton, w restauracji karmiącej gości z całego świata, nie wiedzą, co jedzą wegetarianie i dlaczego ryba nie powinna być oznaczona jako „V” wege.

    Zastanawiam się, czy powinnam zgłębiać temat nieznajomości kuchni wegetariańskich w restauracjach, chcecie, interesuje Was, kto robi największe błędy lub zapiera się jak żaba błota, że w sałatce wege nie ma podsmażonego bekonu mimo, że trzymasz go na widelcu, albo że w musztardzie nie ma goryczy lub wszystkie frytki mają gluten? Nie mówię już o menu spa, gdzie włos się na głowie jeży a tempura jest ciastem naleśnikowym. Chcecie taki cykl?
